The place

Punjab is the land of five rivers and the spiritual home of Sikhism. The Harmandir Sahib in Amritsar serves free langar to over a hundred thousand people daily, Jallianwala Bagh sits a few streets away, Anandpur Sahib fills with Nihang riders at Hola Mohalla, and every meal ends with too much butter.
Punjab is flat, fertile and loud in the best way. Its centre is the Harmandir Sahib in Amritsar, the gilded Sikh shrine set in a sarovar, where kirtan runs from before dawn until late at night and the community kitchen feeds well over a hundred thousand people a day on rotis rolled by volunteers. Two minutes away is Jallianwala Bagh, where General Dyer's troops fired on an unarmed gathering on 13 April 1919; the bullet marks are still in the brick. Thirty kilometres west, the Attari-Wagah border ceremony each evening turns flag-lowering into theatre. Anandpur Sahib, where Guru Gobind Singh founded the Khalsa in 1699, holds Hola Mohalla in March, when Nihang warriors demonstrate gatka and bareback riding, and Moshe Safdie's Virasat-e-Khalsa museum tells the story in sandstone and steel. Elsewhere there is Patiala's Qila Mubarak and Sheesh Mahal, Kapurthala's Moorish mosque, and Harike wetland's winter birds. In February the mustard fields turn yellow to the horizon. Signature journeys pair Amritsar with Anandpur Sahib and a rural farmstay.

A layered maida bread stuffed with spiced potato, paneer or onion, slapped onto the wall of a tandoor and pulled out blistered, then crushed by hand and topped with white butter. It comes with chole and a sharp onion chutney. Eat it for breakfast in Amritsar after the morning prayers at the Golden Temple.
