Odisha keeps the Kalinga temple tradition intact: hundreds of sandstone shrines in Bhubaneswar, the sun chariot at Konark, and Jagannath at Puri, whose Rath Yatra pulls three timber chariots through the streets each summer. Chilika lagoon, Similipal's forests and Raghurajpur's pattachitra painters complete it.

Odisha's coast has 480 kilometres of sand, but its identity is carved in sandstone. Bhubaneswar was a temple city long before it was a capital, and shrines like the eleventh-century Lingaraja, the small jewel-box Mukteswara and the sculpted Rajarani show the Kalinga style developing over four hundred years. Konark, built in the thirteenth century under Narasimhadeva I, imagines the whole temple as the sun god's chariot, with twenty-four carved wheels and seven straining horses. At Puri, the Jagannath temple's Rath Yatra sends three enormous wooden chariots down the Bada Danda each June or July, hauled by lakhs of devotees, with the deities remade from neem wood every twelve to nineteen years. History runs deeper still at Dhauli, where Ashoka's rock edicts record his remorse after the Kalinga war, and at the Jain caves of Udayagiri and Khandagiri. Chilika, Asia's largest brackish lagoon, holds Irrawaddy dolphins at Satapada and vast winter bird flocks at Mangalajodi. Signature journeys link Bhubaneswar, Konark, Puri, Raghurajpur and Chilika.

June or July, on the second day of the bright fortnight of Ashadha. The deities stay at the Gundicha Temple for a week and return on the Bahuda Yatra nine days after setting out.

Rath Yatra

Once a year Jagannath, Balabhadra and Subhadra leave their sanctum in Puri and are hauled three kilometres down the Grand Road on chariots built new every summer. Hundreds of thousands take the ropes, and the Gajapati king sweeps the decks with a golden broom before they move.

Literally burnt cheese: fresh chhena beaten with sugar, semolina and cardamom, poured into a pan lined with sal leaves and baked slowly until the top caramelises almost black. It came from a Nayagarh sweet shop and is now Odisha's state dessert. Buy a wedge in Bhubaneswar or on the road to Puri.
